Recipe(tried): Poor Man's Pudding

This is an old familly favorite and a standard "comfort food" in our house - being French-Canadian we call it "Pudding au Chaumeur" which translates directly to "Well-Fare Pudding" or "Poor-Man's Pudding". You can easilly substitute the brown suggar for your favorite fruit or summer berries for a great summer dessert but in the winter it is always served the traditional way - with brown sugar sauce and lots of cream to pour on top!

Cake:
1/3 c. Shortening
1 c. Sugar
2 eggs
1 tsp. Vanilla
1 1/2c. All-Purpose Flour
2 tsp. Baking Powder
1/2 tsp Salt
1 c. Milk

Sauce:
1 c. Brown sugar, Packed
1 1/2 c. Water

Preheat oven to 350 F
Mix water and brown sugar in deep oven proof baking dish (souffle pan works great!) place in heating oven while preparing cake.
Cream shortening and sugar. Add eggs and vanilla. Combine dry ingrediants. Add to cream mixture alternatly with milk. Pour over heated sauce. Return to oven and cook 35-45 min. or until a toothpick inserted in center comes out clean. (cooking time will vary depending on size of pan - and therefore thickness of cake)
