Pork and Beans Salad 1
1 large can pork and beans
1 green pepper, chopped
1 cucumber, diced
1 onion, chopped
1 c. celery, thinly sliced
3 tomatoes, chopped
Drain pork and beans; save juice. Add all other ingredients; mix. Stir in hot sauce. If it seems too thick, add some of the drained bean juice.
Sauce:
1 egg
1/2 c. vinegar
1/2 c. sugar
1 Tbsp. flour
1/2 tsp. salt
Bring to a boil to thicken and pour over the bean mixture. Chill.
Pork and Beans Salad 2
1 small onion, chopped
1 large green bell pepper, chopped
1 large cucumber, chopped
1/2 c. celery, chopped
1 tsp. salt
1/2 tsp. pepper
1 can pork and beans, chilled
After all ingredients are chopped, add salt and pepper. Stir in pork and beans. Prepare 30 minutes before serving.
Pork and Beans Salad 3
1 (16 oz.) can pork and beans, drained
1 c. chopped tomatoes
1 c. chopped parsley
1/2 c. chopped cucumber
1/4 c. chopped celery
1/4 c. sliced green onions
2 Tbsp. vegetable oil
1 to 2 Tbsp. lemon juice
1 tsp. chili powder
Fold beans into combined vegetables. Combine oil, lemon juice and chili powder. Pour over salad; toss lightly. Chill several hours.
