Recipe: Pork Cake

This is a recipe from our church cookbook. The recipe was submitted by one of the older cooks in the congregation. This is her mother's recipe. I haven't made it and claim no responsibility for the taste. If you make it, let us know how it turned out!

My Mother's Pork Cake

1 lb. finely ground pork fat
4 cups brown sugar
1 pint strong black coffee
2 lbs. raisins
9 cups flour
1 tablespoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1 cup chopped walnuts

Pour hot coffee over the ground fat pork. Let cool then add sugar, raisins, flour, cinnamon, nutmeg, baking soda and salt. Stir in nuts. This makes a large cake. Bake in 325 degree oven until done. About 1 hour and 25 minutes. Do not over bake.
