Recipe: Pork Cake

Misc.

Sandi R, here's a recipe I just received in the mail.
Haven't tried it yet though.

Sausage Cake

1 15 oz box raisins
2 c cold water
1 3/4 c brown sugar
3 c self-raising flour
1 t salt
1 1/2 t soda
1 t cinnamon
1 lb sausage
1 c chopped pecans
1 c chopped candied cherries

1.) Combine raisins, water, soda. Cook until 1 cup of liquid is left.
2.) Mix sausage, brown sugar, cinnamon, cherries and pecans. 3.) Mix
all ingredients well with hands. 4.) Grease and flour lightly a large
tube pan. Bake at 350F for 1 hour. Reduce heat to 300F and continue
baking for 20 more minutes.
