Recipe: Romaine and Broccoli Stir-Fry (using bacon, 1980's)

ROMAINE AND BROCCOLI STIR-FRY

1 small head romaine
2 slices bacon, cut up
3 cups broccoli flowerets
2 tablespoons water
1/2 teaspoon sugar
1/8 teaspoon salt

Slice romaine into 1/2-inch-wide strips.

In a large heavy skillet cook bacon over medium heat till crisp; drain, reserving drippings in skillet. Set bacon aside.

Add broccoli to drippings in skillet; stir to coat pieces. Stir in the water, sugar, and salt. Cover; simmer for 4 minutes.

Stir in the romaine; stir-fry 3 minutes. Sprinkle bacon pieces atop to serve.

Makes 3 servings
