Pork Roast Dinner
This was origonally for a pork shoulder but I used a pork loin and got good results.
4 lb. Pork Loin
2 lb. potatoes (6 to 8 medium)
1 large onion
1 teaspoon crushed brown mustard (Iused dry mustard)
1/4 teaspoon rosemary
1 clove garlic minced
1/4 teaspoon thyme
1/2 - 1 teaspoon salt
1 teaspoon ground black pepper
1/3 cup water
Preheat overn to 450 F.
Rub roast with vegetable oil, then coat meat with seasonings, pepper and salt.
Peel and slice onion into 1/4 inch rounds. Place a few roundss of onion in a roasting pan, place roast on top, put the rest of the onions on and around the roast.
Roast at 450 F. for 15 minutes, then reduce heat to 350 F. cook for 1 1/4 hours.
Peel and quarter potatoes lenghtwise then chop ino 3/4-inch cubes. Remove pan from oven place roast on a plate. Pour water into pan, scrape well to dislodge browned bits and onion. Add potatoes, toss well to coat. Push potatoes to side place roast back in pan in the middle, and return to oven.
Roast for an additional 1 1/4 hours, turning potatoes every fifteen minutes while cooking, tossing well to coat with pan juices.
Remove the roast at least ten minutes prior to serving. At this point if potatoes are not brown enough for your liking, turn oven temperature to low broil for 5 to 7 minutes, turning and shaking every few minutes. The liquid in the pan should reduce by half.
