Recipe(tried): Roast Pork and Spiced Apples

Main Dishes - Pork, Ham
ROAST PORK AND SPICED APPLES

1 tsp each salt and ground ginger
1/2 tsp each nutmeg and cinnamon
pepper to taste
4 to 5 lb center cut pork loin roast
1/2 cup water
1/4 cup of honey
1 tbsp fresh lemon juice
1/4 tsp each, ginger, nutmeg, and cinnamon
2 medium-sized red cooking apples, peeled and sliced

Preheat oven to 325 degrees.

Rub the salt, ginger, nutmeg, cinnamon, and pepper into the roast. Place roast on a rack set inside a roaster pan, fat side up. Place enough water in bottom of pan to prevent burning.

Place in oven and cook until roast tests done.

Combine water, honey, lemon juice, ginger, nutmeg, and cinnamon in a medium-size saucepan. Stir well and bring to a boil.

Add apple slices, cover and simmer about 8 minutes or until the apples are tender, stirring occasionally.

Spoon the apples over pork slices when served.
