GRILLED MARINATED PORK CHOPS WITH MOJO
This is a dish Cubans live for! Keep some extra mojo in the refrigerator in case you want to spice up steaks, fish or chicken for a quick and simple grilled dinner.
10 cloves garlic, peeled
3/4 cup orange juice, divided
2/3 cup olive oil
Juice of 2 limes
3 tablespoons dried oregano
1/8 teaspoon ground cumin
Salt and pepper to taste
6 double-cut pork chops*
TO MAKE THE MOJO SAUCE:
Puree garlic, 1/4 cup of the orange juice, olive oil, lime juice, oregano, cumin, salt and pepper in a blender or food processor fitted with a metal blade. Set aside 1/3 cup of the mojo sauce and refrigerate.
TO MAKE THE PORK MARINADE:
Combine the remaining 1/2 cup orange juice with the remaining 2/3 cup mojo sauce in a large bowl and add the pork chops, turning to coat well. Cover and refrigerate for 1 to 2 hours, turning the pork occasionally.
Discard the marinade and grill the pork chops on a hot grill for 5 to 7 minutes per side until done.
Serve with reserved Mojo Sauce.
*Instead of double-cut pork chops, you can use 10 to 12 thin-cut chops, marinate for 30 to 45 minutes and grill for 2 minutes per side; or use 8 to 10 center-cut chops, marinate for 1 hour and grill 3 minutes per side.
