Portabella Mushroom Sesame

4 large portabella mushrooms
2 tbl sweet rice wine
2 tbl reduced-sodium soy sauce
2 cloves garlic -- minced
1 tsp sesame oil
Remove stems from mushrooms and set caps aside. Combine remaining ingred. in a small bowl. Brush both sides of mushrooms with soy mixture. Grill mushrooms top-side up on covered grill over med. coals 3-4 min. Brush tops with soy mixture and turn over; grill 2 min. more or until mushrooms are lightly browned. Turn again and grill, basting frequently, 4-5 min. or till tender when pressed with the back of spatula. Remove and cut diagonally into 1/2" thick slices.

Portobellos in Marsala Sauce

6 tbl olive oil
3 large portobello mushrooms -- cut in 1/4" slices
1 tsp garlic -- minced
1/2 cup Marsala wine
1/3 cup demiglace*
salt and pepper
1 tbl butter -- softned
crusty bread
Heat oil in large skillet over med. heat. Add mushrooms and saute 1 min. (Mushrooms will absorb most of the oil.) Add garlic and cook 2 min., shaking pan to prevent sticking. Add Marsala and stir to deglaze pan. Cook until most of the liquid is absorbed. Add demiglace and heat through. Season with salt and pepper. Remove mushrooms with a slotted spoon and place in a small bowl and toss with butter. Top with Marsala sauce, serve warm with crusty bread to sop up sauce.

NOTES : *Beef gravy thinned with water may be substituted for demiglace.

Mushroom Parmesan

4 large portobello mushrooms -- sliced 1/2" thick
1 jar your favorite marinara sauce
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Spray baking dish with nonstick spray. Layer mushrooms, cheeses, and sauce in the dish, ending with sauce. Bake at 375 degrees for about 40 min. or until cheese has melted and sauce is bubbly.
