let the meat stand at room temp. for at least 1 hr. prior to cooking.
375 degrees
salt and pepper
fat side up in shallow pan DO NOT COVER
cook for just one hour. Turn off heat but DO NOT OPEN OVEN. Regardless of length of time meat has been in oven, turn on again cook remaining 40 minutes at 375. The meat will be brown and crisp on the outside and beautifully pink inside. you can buy the au jus packets to make your au jus. My butcher gave me these instructions last year and it turned out perfectly. That was a 5 1/2 lb. prime so you will need to adjust your final baking time. I hope this helps somewhat.
