Pumpkin Chocolate Muffins
1 2/3 c. flour
1 c. sugar
1 Tbsp. pumpkin pie spice
1 tsp. baking soda
1/4 tsp baking pwdr.
1/4 tsp. salt
2 large eggs
1 c. plain pumpkin
1/2 c. butter, melted
1 c. chocolate chips - I use the minis
Mix flour, sugar, spice, soda, powder, and salt. Break eggs into another bowl and add pumpkin and butter - whisk till blended and then stir choc. chips. Pour over dry ingredients and mix until moistened. Makes about 12 regular size muffins. Bake 20-25 min. at 350. These keep well and are even better after a couple of days.
