Recipe(tried): Albers Corn Meal Muffins (1943)

ALBERS CORN MEAL MUFFINS

1 1/2 cups sifted flour
1 1/2 teaspoons salt
2 Tablespoons sugar
4 teaspoons baking powder
1 cup Albers Corn Meal
1 egg, beaten
1 cup sweet milk
2 Tablespoons melted shortening

Sift flour with salt, sugar, and baking powder. Add corn meal.

Mix egg, milk, and shortening, add to dry ingredients, and stir just until blended but not smooth. Fill greased muffin pans 2/3 full.

Bake in a hot oven (425 degrees F) about 25 minutes.

Makes 12 medium-sized muffins.
