Pumpkin Orange Glazed Cookies ......these are great!
Makes 4 doz. cookies
Bake at 375 F for 12-14 min.
2 1/2 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup butter, softened (not melted)
1 cup gran. sugar
1/2 cup packed brown sugar
1 egg
1 3/4 cups pure pumpkin (not the spiced variety)
2 tbsp. oranged jucie
2 tsp. grated orange peel
1/2 cup chopped nuts (optional)
orange glaze (to follow)
Combine flour, baking soda and salt in a bowl. Combine butter, sugar and gran sugar in large mixer bowl, beat until creamy. Add egg, pumpkin, orange jucie and peel. Beat until combined. Gradually add flour mixture, beat until combined. Stir in nuts. Drop dough by rounded tablespoons onto ungreased baking sheets. Bake in a preheated 375 oven for 12-14 min. or until edges are set. Remove to wire racks to cool completely. Spread each cookies with about 1/2 tsp. orange glaze. ....glaze recipe below.....
Orange glaze:
combine 1 1/2 cups sifted powdered sugar, 2-3 tbsp. orange juice concentrate and 1/2 tsp. grated orange peel in med. bowl until smooth.
Also Lori D./Fl...I believe..... posted a lovely pumpkin pie muffin a few days ago. These are delicious ...the molasses flavour reminds me of a molasses bran muffin but without the texture.
