FRUITY REFRIGERATOR COOKIES
(Cookie dough is shaped into rolls and refrigerated 8 hours before slicing and baking.)
1 (9 ounce) package condensed mincemeat
1/2 cup water
3 1/4 cups sifted flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup shortening
1 cup brown sugar
1 egg, well-beaten
Break mincemeat into pieces, add water and cook slowly, stirring constantly until all lumps are thoroughly broken up. Heat to boiling; continue boiling until mixture is practically dry about 3 minutes. Cool.
Sift flour, salt and baking soda together and set aside.
Cream shortening with brown sugar until fluffy. Add egg and beat vigorously until smooth and creamy. Add sifted dry ingredients gradually, mixing until thoroughly blended: Fold in cooled mincemeat.
Form into rolls 3 inches in diameter and roll in waxed paper. Chill 8 hours.
WHEN READY TO BAKE:
Preheat oven to 400 degrees F. Grease cookie sheets.
Slice rolls into cookies 1/8-inch thick and place a on greased cookie sheet.
Bake in 400 degree F oven until brown, 8 to 10 minutes.
Makes 5 dozen cookies
