Recipe(tried): Pumpkin Pie Bars

This recipe was posted by Karin on www.cookierecipe.com. It's probably one of the easiest, prettiest and most delicious bar recipes I've ever tried. Brought it to work today and it disappeared in a jiffy. Many requests for the recipe and one woman said, "It's better than pumpkin pie!"

Pumpkin Pie Bars

1 (18.5 oz.) box yellow cake mix
1/2 cup melted butter or margarine
3 eggs
3 cups pumpkin pie filling
2/3 cup milk
1/4 cup white sugar
1 tsp. cinnamon
1/4 cup butter or magarine

Preheat oven to 350 degrees F. Grease bottom of a 9x13 inch pan.

Pour 1 cup of cake mix into a medium-size mixing bowl; set aside.

Combine remaining cake mix, 1/2 cup melted butter and 1 egg; mix well. Press into prepared pan. Combine pumpkin pie filling, 2 eggs and milk in a medium-size mixing bowl; mix until smooth. Pour evenly over crust in the pan. Pour sugar and cinnamon into the bowl containing cake mix. Cut in butter until crumbly. Sprinkle mixture over pumpkin filling.

Bake for 45 to 50 minutes or until knife inserted into bars comes out clean. Let cool before cutting.

I served this to people at work on paper plates with an autumn leaf pattern...only thing missing was a dollop of whipped cream or a spoonful of vanilla ice cream. It's too easy to taste this good.
