Recipe: Pumpkin-Pineapple Cookies

This cookie recipe looked appropriate for the fall season.

Pumpkin-Pineapple Cookies

1/2 cup butter
1 cup brown sugar
1/2 cup white sugar
1 egg, beaten
1 cup pumpkin
1/2 cup crushed pineapple (drained)
1 cup oatmeal
1 cup pecans
2 cups flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 cup milk

Cream sugar and shortening, add egg and pumpkin, mix well.

Sift dry ingredients together, add alternately with milk to the creamed mixture. Add pineapple, oatmeal and pecans.

Drop by spoonful on greased cookie sheet. Bake at 350 degrees for 10-12 minutes or till done.
