PUMPKIN STREUSEL PIE
FOR THE STREUSEL:
1/2 cup chopped walnuts
2 tablespoons brown sugar
1 tablespoon butter or margarine
FOR THE PIE:
1 1/2 cup half and half cream or milk
1 (4-serving size) pkg vanilla instant pudding
3 1/2 oz Cool Whip Whipped Topping
1/2 cup canned pumpkin puree (not pie filling)
1 1/2 tablespoon pumpkin pie spice
1 graham cracker crumb crust
TO MAKE THE STREUSEL:
Mix walnuts, brown sugar and butter in small microwavable bowl. Heat on high for 2 1/2 minutes or until bubbly, stirring once during heating time. Stir well. Set aside to cool before folding into pie.
TO MAKE THE PIE:
Beat half and half cream and pie filling in a large mixing bowl with a wire whisk for 1 minute. Let stand 5 minutes.
Fold in the whipped topping, pumpkin, pumpkin pie spice, and the cooled streusel; spoon into crust. Freeze until firm.
TO SERVE:
Let stand at room temperature for 10 minutes before serving to soften.
Store leftovers in freezer.
Yield: 6 servings
