QUESADILLAS

Recipe Courtesy of Gourmet Magazine

6 (10-inch) or 12 (7-inch) flour tortillas
1 pound Monterey Jack cheese, grated
4 pickled jalapeno peppers, minced wearing rubber gloves
2 tablespoons minced fresh cilantro

Heat a griddle or large frying pan on the stove. Lay 2 tortillas on the griddle
and cover with grated cheese.
Sprinkle pickled jalapeno and cilantro over the cheese, and top each with
another tortilla. Press the tortillas
down with a spatula and then flip them over. Transfer the quesadillas to a
cutting board and cut them into
wedges.

Yield: about 40 hors d'oeuvres
