Recipe(tried): Quick and Easy Beef and Bean Burritos
Menus Today we spent a great deal of the day out working in the yard. What a hot day it was! Boy was it a relief to come in and have a cold glass of iced lemonade! After being tied up in the yard today, I really didn't feel like cooking a big meal so I skimped on a previous recipe and made Beef and Bean Burritos even quicker. With them I served Spanish rice and tall glasses of iced tea. Hope everyone has a good night!
Quick Beef and Bean Burritos
1 lb. ground chuck, browned with 1 small onion chopped.
1 pkg. taco seasoning mix
1 pkg. flour tortillas
1 jar picante sauce ( I use Pace)
1 cup mexican cheese mixture (or cheddar works well)
1 can refried beans.
Once I browned the meat, I added the taco seasoning and a little under 1 cup of water, and let it simmer. While it was simmering, I heated the tortillas in the microwave for 1 minute.
I spread refried beans on the warm tortillas and placed about two TBSP of taco mixture on each shell. I wrapped them up and placed in baking dish that had been sprayed with cooking spray. I then poured picante sauce over the burritos and sprinked with cheese. Bake for 350 for 20 minutes or so.
*This meal can also be made using the microwave exclusively. I have sometimes fixed the burritos and placed them on individual serving plates and microwaved them for about 1 to 2 minutes or until hot and served them without heating in the oven. This works especially well if you heat the beans in the microwave before placing on the shell. Since everything is already warm, it takes little time to actually heat the meal. Just be careful the plates can get really hot.
