QUICK CHILI CON CARNE CALIFORNIA STYLE
2 tablespoons vegetable oil
1 pound ground round
1 large onion, chopped (1 cup)
1 tablespoon chili powder
1/2 teaspoon ground cumin
1 teaspoon salt
1/3 cup dry red wine
1 (8 ounce) can tomato sauce
1 green bell pepper; seeded and diced
FOR SERVING:
4 cups shredded iceberg lettuce
1 avocado, peeled, pitted and sliced
4 green onions, sliced
Heat the oil in a wok or large skillet Add the beef and onion; cook, stirring, until the meat browns slightly.
Stir in the chili powder, cumin and salt. Add the wine, tomato sauce and green pepper. Cover; cook, stirring often, for 5 minutes.
TO SERVE:
Arrange the lettuce and avocado on plates, spoon the hot chili over and sprinkle with the onions.
Makes 6 to 8 servings
