This is a recipe I use for a quick but fabulous dessert. I have read many of the recipes on this website and decided to contribute this one from England. It is a sort of brulee with fruit.
QUICK DESSERT
fruit (berries are very good)
liquer of your choice eg: Cointreau
1 (1 lb) carton Greek yogurt
1 cup heavy (whipping) cream, whipped (optional)
Demarara (brown) sugar
Use any sliced up fruit. My favourite is a mix of strawberries and mango. Lay in the bottom of a medium size shallow china dish. Pour a little liqeur over the fruit to taste.
Drain off the liquid from the top of the Greek yogurt. Either use just the yogurt or you may mix with the whipped cream too. Top the fruit with a generous layes of the yogurt and seal to the edges of the dish. This may sit in a fridge until needed.
Heat a broiler until hot and then sprinkle the sugar quite thickly over the yogurt and broil immeditately. Watch it carefully as it only takes a minute or two to caramalise. Turn the dish to get an even colour if needed. The top will be crunchy and the underneath will be cold and juicy.
Once you have tried this recipe I know it will become a favourite.
