Recipe(tried): Quick Dinner - Parmesan Chicken

We had unexpected company for dinner tonight. I had boneless, skinless chicken breasts thawed out, so I served one of our family favorites:

Parmesan chicken
Mashed potatoes
French bread slices
Strawberry cheesecake ice cream

I don't have an actual printed recipe for the Parmesan Chicken but it is pretty easy to make. Take the boneless, skinless chicken breasts and pound them flat (I wrap them in plastic wrap and then use a rolling pin to pound them flat). Break an egg in a bowl and whip it up with a fork. Pour about a cup of the Italian bread crumbs in another bowl (I use Progresso Italian Style bread crumbs). Heat the oil (about a half an inch) in the skillet until hot. Dip the chicken in the egg and roll into the bread crumbs. Place in the hot skillet and brown on both sides. Continue cooking until no longer pink in the center (10-15 minutes). Drain on paper towels before serving.
