Recipe: Quick Lunchbox Cake (using fruit cocktail) (1967)

QUICK LUNCHBOX CAKE

2 1/4 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup firmly packed brown sugar
2 eggs
1/4 cup butter, softened
1 (1-pound) can fruit cocktail, undrained
1/2 cup semi-sweet chocolate pieces
1/2 cup chopped nuts

Grease and flour bottom of 13x9- inch pan.

Combine all ingredients except chocolate and nuts in large mixer bowl. Blend well at lowest speed of mixer; beat 2 minutes at medium speed. Pour batter into pan. Sprinkle with chocolate pieces and nuts.

Bake at 350 degrees F for 35 to 40 minutes.

Makes 1 (13x9-inch) cake
