Recipe: Ranch Dressing and Ceasar Salad Dressing for Mike

Salads - Salad Dressings
RANCH DRESSING

1 c. plain low-fat yogurt
1 pkg. Hidden Valley Ranch salad dressing mix
1 tbsp. lemon juice
1/3 c. skim milk

Combine all ingredients. Refrigerate until chilled. Serve over green salad or use as a vegetable dip. Yield: 1 1/2 cups.

RANCH DRESSING
mix the following until smooth:

1 c. mayonnaise
1/2 c. sour cream
1 tsp. garlic powder
1 tsp. dill weed
1/4 c. milk
1 tbsp. parsley
1 tsp. onion powder

Creamy Ranch Dressing
(makes 1 cup)

3/4 cup plain low fat yogurt
1/4 cup low-fat mayonnaise
1 tablespoon cider vinegar
2 teaspoons Dijon mustard
1/4 teaspoon ground pepper
1/4 teaspoon dried thyme
1 green onion, minced

In a small bowl, add all ingredients; mix with a whisk until blended. Cover and refrigerate.

Caesar Salad Dressing:

2 Minced Anchovies (optional)
1/4 c Olive Oil
1 t Minced Garlic
1 t Dijon Mustard
1/8 c Grated Parmesan Cheese
Dash Tabasco
Dash Worcestershire Sauce
2 T Lemon Juice

Whisk all ingredients together. Serves 2-4 people. This dressing goes well with heart-shaped croutons (for Valentine's Day), hearts of palm and artichoke hearts.
