Recipe: Latkes (potato pancakes, 1930's)

Side Dishes - Potatoes
LATKES (POTATO PANCAKES)

Whole potatoes (to make 2 cups raw, grated potatoes)
2 eggs
A pinch of baking powder
1 1/2 tsp. salt
A little ground black pepper
1 tbsp. flour, bread crumbs or matzo meal
Vegetable oil (for frying)
Applesauce (for serving)

Peel large potatoes and soak the whole potatoes several hours in cold water.

WHEN READY TO COOK:
Grate potatoes on large blade and drain well.

Beat eggs well and mix with potatoes, baking powder, salt, pepper and flour, bread crumbs or matzo meal.

Drop by spoonfuls on a hot, well-greased griddle or in a frying pan. Turn and brown on both sides.

Serve with applesauce.

Makes 3-4 servings
