RAY HORTON'S SESAME CHICKEN WITH NOODLES
FOR THE MARINADE:
1/4 cup sugar
1/3 cup soy sauce
1/4 cup dry sherry
2 tablespoons wine vinegar
2 tablespoons sesame oil
1 teaspoon ginger, minced
1 clove garlic, minced
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
FOR THE CHICKEN:
1/2 cup walnut pieces
2 tablespoons fresh parsley
4 boneless chicken breast halves
2 teaspoons cornstarch
1 sweet red bell pepper, sliced
1/4 cup sliced scallions
1 cup shredded red cabbage
2 tablespoons sesame seeds
Cooked spinach noodles (for serving)
TO MAKE THE MARINADE:
Combine first 9 ingredients in microwave-safe 2-quart casserole. Cut chicken in 1/2-inch wide strips; add to marinade. Cover and refrigerate for 30 minutes.
WHEN READY TO COOK:
Drain chicken, reserving 1/4 cup marinade. Combine reserved marinade and cornstarch; toss with chicken. Cover with plastic wrap (leave a vent edge). Microwave on high for 5 minutes.
Uncover; stir in red pepper and scallions. Re-cover and microwave on high for 2-3 minutes, or until chicken is tender.
Stir in remaining ingredients. Re-cover with plastic wrap and let stand for 1 minute. Serve with cooked spinach noodles.
