Recipe(tried): Re: Cheap But Yummy Suppers - Round Steak w/Rice

This was the first dish I prepared for my husband after returning from our honeymoon (3 1/2 years ago) & I still make it at least twice a month.

Round Steak w/Rice

1 cup long grain white rice (not minute rice)
2 1/4 c. water

Microwave rice & water on high for approx. 7 minutes, uncovered
Stir once & microwave additional 5 minutes (may have to adjust time slightly according to your microwave)

While rice is cooking:

Heat:
2 T. canola oil
2T. soy sauce

Add:
1 lb boneless, top round steak cut into bite size pieces
Stir & cook until mostly done

Add & fry until tender:
1 green/bell pepper, chopped
1 med. onion, chopped
4 oz sliced mushrooms or pieces (optional)
1/2 yellow or red sweet pepper (optional)

Finally:
Add 1 can Campbell's Beef Broth or 1 cup broth prepared from Wyler's granules
& cooked rice. Ready when juices are absorbed.

Tip: Round steak is often on sale, (I can always get a package for a little over $3 even when it's not) buy a few packages & cut into bite size pieces & freeze. I often make this The Day Before Payday because it's so easy to keep the ingredients on hand.
