Char Kway Teow
(Chinese Hawker Style Stir-Fried Fresh Rice-Flour Noodles)

A popular dish served at street side food stalls in Malaysia and Singapore

Approximately 1/2 package or 1 lb of fresh rice noodles
6 - 10 cloves garlic, finely chopped
1 bunch green onions or Chinese chives, chopped
2 cups bean sprouts
2 - 3 chinese sausages (Lap Cheong)
1/2 cup fresh shrimp
1/2 chicken breast, cut into small pieces
2 eggs
1 - 2 tsp Sambal Oelek (or any other chili paste)
ground black pepper to taste
salt to taste
1/4 bunch fresh coriander
2 - 3 Tbsp. light soya sauce
1 - 2 Tbsp. kecap manis (can be substituted with thick dark soya sauce and 1 Tbsp sugar)

Oil your wok. Fry some of the garlic 6 cloves about, your fresh noodles, ground pepper for a few minutes.

Remove noodles from heat and place noolde mixture in a bowl and set aside.

Heat wok again and add fresh oil if needed, add remaining garlic, sausages and chicken and stir fry until chicken is cooked. Then add Sambal Oelik add fresh shrimps and then add the noodles that are in the bowl to the shrimps and mix well.

Keep all ingredients in your wok, then move some of your ingredients to the side from the middle and drop in your eggs, stirring to break up eggs all the time then add salt pepper to taste. Add kecap manis. bean sprouts and green onions and stir everything together well and serve.
