(Chinese Hawker Style Stir-Fried Fresh Rice-Flour Noodles)

A popular dish served at street side food stalls in Malaysia and Singapore
Approximately 1/2 package or 1 lb of fresh rice noodles
6 - 10 cloves garlic, finely chopped
1 bunch green onions or Chinese chives, chopped
2 cups bean sprouts
2 - 3 chinese sausages (Lap Cheong)
1/2 cup fresh shrimp
1/2 chicken breast, cut into small pieces
2 eggs
1 - 2 tsp Sambal Oelek (or any other chili paste)
ground black pepper to taste
salt to taste
1/4 bunch fresh coriander
2 - 3 Tbsp. light soya sauce
1 - 2 Tbsp. kecap manis (can be substituted with thick dark soya sauce and 1 Tbsp sugar)
In a hot well-oiled wok or skillet, stir fry heaps of garlic, fresh noodles, ground pepper and noodles for a few minutes. Remove from heat and place in a bowl. Reheat the wok and add some fresh oil if necessary. Add garlic, sausages and chicken and stir fry until cooked. Then add Sambal Oelek, fresh shrimp and fried noodles. Mix well.
Make a hole in the centre of wok and crack EGGS into the middle. Allow eggs to cook, stirring occasionally to keep the eggs broken up. Add pepper and salt to taste.
Add kecap manis and stir. Then add bean sprouts and green onions. Stir well. Serve.
