Have you got the recipe you want yet? From your description, I think the dish you had is Chow Hor Fun which is usually made with thick rice noodle (Hor Fun) but it also has its thin noodle variant. If you say the same name to different people you might get a different dish. It is important to specify that it is with brown gravy. It has been very difficult to even find a good version of this dish nowadays. This is a high difficulty dish that you have to set fire in the wok to flame the bee hoon (mee hun) which is how you bring the authentic flavour of the dish to your noodles. The gravy should be simple boiling ingredients in stock and add a bit of cornstarch to thicken it and pour it on your bee hoon (cooked seperately).... well, or you can cook together by adding it in the gravy and cook a little bit.
