Recipe: Re: ISO Looking for recipes using bananas

These are not baked items but good ways to use up those bananas.
Strawberry-banana roll ups
Thaw and thoroughly drain one bag of frozen strawberries. Puree the berries with 2 large very ripe bananas. Spread on lightly oiled dehydrator trays and dy according to directions. Kids love these.
Baked bananas
1 small jar apricot jam
1 ounce melted butter
1/4 cup brown sugar
lemon juice
4 bananas, sliced lengthwise in halves
Spread bananas with jam and pour over a mixature of the melted butter, brown sugar and a bit of lemon juice. Bake 350 degrees for about 20 minutes, basting occasionally.
Banana Ice Cream
6 very ripe bananas
juice of 2 lemons
juice of 2 oranges
3 large can evaporate milk
1 cup sugar
1/2 cup whole milk
Mash bananas. Add sugar and juices. let stand 30 minutes. Add the two milks. Stir well and freeze in shallow pan in freezer, stirring
often.
Banana Mint Slush for 2
1 ripe banana
6 mint leaves
grated zest of 1 lime
1 cup skim milk
4-5 ice cubes
Place the banana in a blender and puree until smooth. Add the remaining ingredients and blend until slushy. Serve immediately.

Banana Orange Smoothis for 1
1 banana
1 orange, sectioned
1 1/2 teaspoon honey
1/2 cup skim milk
1 1/2 teaspoons lemon juicie
1/2 teaspoon vanilla
Process all in a blender until smooth and enjoy immediate
ly.
