1 large egg white
1 to 1-1/3 C powdered confectioner's sugar
1/4 t cream of tartar
Beat sugar and egg on low speed till sugar is moistened
Add cream of tartar and beat till you have stiff glossy peaks.
If the stuff seems to wet or loose and won't beat up, add more sugar
till nice and stiff. Store covered. Best if used immediately.

You can pipe this stuff from a cake decorator's bag for special
effects.
