Recipe: Spinach and Pear Salad with Golden Raisins and Almonds

SPINACH AND PEAR SALAD

FOR THE SALAD:
5 oz. fresh spinach, washed and dried
1 medium pear, peeled and cut into wedges
1/3 cup golden raisins
1/3 cup slivered almonds

FOR THE DRESSING:
1/4 cup olive oil
1 slice from a medium-size onion (or to taste)
1 tbsp. cider vinegar
1/2 tbsp. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. Worcestershire sauce
Pinch sugar
Pinch dry mustard
Pinch each dried basil and oregano
Pinch ground black pepper

In a large salad bowl, gently toss spinach, pears, raisins and almonds; set aside.

Mix all dressing ingredients together in the blender.

Pour dressing over salad; toss and serve.

Makes 3 servings (can easily be doubled)
