This is an old family favorite - we call it Mock Duck

Pound or flatten one round steak. Rub with dry onion soup mix. Make a dressing as for a chicken as follows. 3 cups of dry bread crumbs, one large onion, chopped, 2 or 3 stalks of celery, chopped. Fry onion and celery with a small clove of garlic in 4 tbsp. butter until onion is limp. Add all to dry bread crrumbs and mix. Add one egg and mix. If mixture does not hold together when squeezed, add a bit of water or milk. Add 1 tsp. of sage and a sprinkle of oregano to taste (can be altered if desired). I also add a bit of seasoned salt. Make a log of dressing and place on round steak. Roll steak and secure with meat pins or tie with string. Bake in 350 degree oven for about one hour. If meat becomes dry, add a few tbsp. of water to keep moist. (I sometimes add a chopped apple to my dressing for a different flavor). To serve, slice in 1 inch rounds.
