Here are some suggestions. For 250 people. 5 gal. of Pasta salad( may be 2 or 3 types), meat serving station should be 6 oz. per person. Finger foods if you have three, you can do one each person, if you have less than that figure 3 per person if they are all at the same station. I hope this helps you. You have a good variety of food. You might think of adding the veggies on a station and use brushetta bread with a crab salad or pesto on the breads served on trays by servers to use until buffet is ready. People will eat a lot more veggies at a station and they are cheaper to make and used for a filler at a table cause they are so colorful. Hope this helps.
