Recipe(tried): Recipes for Friend in Need - Breakfast Casserole, Dagwood Sandwiches, and Meatball Stroganoff
Recipe CollectionsYou can bake this BREAKFAST CASSEROLE but it reheats very well in the microwave (cut a piece, put on microwaveable plate):
8 oz pkg crescent rolls
8 oz brown & serve sausage (links or patties; warm, brown in skillet, squeeze on paper towel)
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
4 eggs
1/4 cup milk (measure milk in 2 or 4 cup glass measuring cut; add eggs, whisk thoroughly.
Press rolls in bottom & part way up sides of UNGREASED 9X13.Pinch seams together. Cut sausage in bite-sized pieces and put on crust. Scatter cheddar, then Swiss cheese over crust & sausage. Finally, pour egg/milk mixture over all.
Bake 425 degrees 20-25 minutes (uncovered).
Another suggestion: Make "DAGWOOD" SANDWICHES using a long loaf of Italian bread, various lunchmeats, cheese slices. Send tomatoes and lettuce slices separately.
Also, this is a hot meal: easy, relatively cheap, reheatable:
MEATBALL STROGANOFF
12 oz jar Beef Gravy
1/2 cup Sour Cream
One .. 12 oz package frozen fully cooked meatballs, thawed
Cooked egg noodles.
In large pan, combine gravy and sour cream. Bring to a boil; stir in meatballs. Reduce heat, cook uncovered 15-20 minutes until heated through. Meanwhile, cook noodles according to package directions. In this case, mix all together; otherwise, could be served separately.
Good luck and thanks for being a good, helpful friend to your friend in her time of need.
