LUBY'S BAKED FISH ALMONDINE
1 scant cup coarsely ground bread crumbs
1/4 cup sliced almonds, toasted
1 teaspoon kosher salt
3 tablespoons unsalted butter or margarine, melted (more, if needed)
2 to 3 tablespoons all-purpose flour
2 (6- to 8-ounces each) skinless haddock, cod or other fish fillets
1/2 cup mayonnaise
water
Preheat the oven to 350 degrees F. Lightly grease a medium baking pan.
In a small bowl, combine the crumbs, almonds, salt and butter. Add additional butter, if necessary, to make the mix hold together.
Place the flour in a separate shallow bowl, and coat the fish lightly in the flour, shaking off the excess.
Place the fillets in the prepared pan. Spread mayonnaise evenly over their surface, and sprinkle with the crumb mixture, lightly pressing it into each fillet.
Carefully pour water around the fillets to the depth of 1/8-inch.
Bake 20 minutes or until the fish flakes when you test it with a fork.
Makes 2 servings
