8-17-99 Recipes Using Beef: Meatballs/Meatloaf

KellyWA (07:45:05) : SWEDISH MEATBALLS

Yield: 6 servings

1 c Milk
1 1/2 lb Ground beef
1 Onion, medium grated
1/8 tsp Nutmeg
1/8 tsp Ginger
1 tsp Salt
1/4 tsp Pepper
3/4 c Flour
2 Egg, beaten
4 tbsp Flour
2 c Beef stock

Heat milk, do not boil. In separate bowl combine beef, onion and spices. Add flour slowly blending thoroughly. Gradually mix in milk. Add eggs and beat until mixture is light and puffy, about 5 minutes.

Cover and refrigerate 1/2 hour. Then roll beef into 1-inch balls. Brown meatballs under broiler. Remove. Set aside.

Add flour to broiler beef drippings and stir until smooth. Gradually stir in beef stock; Bring to boil. Season with salt and pepper. Simmer 5 minutes; Add meatballs to sauce. Simmer gently covered 15 minutes. Place in serving dish.KellyWA (07:42:36) : Sweet & Sour Meatballs

Yield: 20 Meatballs

1 Green pepper, thinly sliced
2 can Pineapple chunks (8 oz), drained (reserve juice)
Chow mein noodles

---SAUCE---
3/4 c Packed brown sugar
3/4 c Cider vinegar
1/4 c Cornstarch
1/4 c Soy sauce

---MEATBALLS---
1 lb Ground beef, crumbled
1 large Egg
1/4 c Unseasoned dry bread crumbs
1 tbsp Soy sauce

Combine meatball ingredients. Shape mixture into 20 meatballs. Cook in a skillet, over medium heat until browned and cooked through. Set aside.

In a 2-c measure, combine reserved pineapple juice with enough water to equal 1 1/3 c; set aside. In a 2-qt casserole, combine the brown sugar, vinegar, cornstarch and soy sauce. Blend in the pineapple juice mixture.

Microwave at high for 7 to 15 minutes, or until the mixture is clear and thickened, stirring 3 or 4 times during cooking. Set aside.

At this point the meatballs and sauce can be refrigerated, for later preparation.

Add meatballs, green pepper slices and pineapple chunks to the sauce.

Microwave at high for 4 to 6 minutes, or until mixture is hot, stirring once or twice during cooking time.KellyWA (07:34:30) : DANISH MEAT BALLS

1 lb Hamburger
1/3 c Catsup
2 tsp Worcestershire sauce
1/2 tsp Salt
1/8 tsp Pepper
3-4 dashes Tabasco
1/2 Green pepper (minced fine)

--SAUCE--
3/4 c Catsup
1/2 c Water
1/4 c Cider vinegar
3 tbsp Brown sugar
1 1/2 tsp Salt
1 t Pepper
3-4 dashes Tabasco
2 tsp Soy sauce
2 tsp Sugar

Mix well & form into balls the size of walnuts. Cook over low heat until done but not brown.

Danish meat ball sauce: Simmer approximately 20 minutes. Pour over meat balls.KellyWA (07:39:26) : Crockpot Meat Loaf

1/2 Cup whole milk
2 Slices white bread
1 1/2 Pounds ground beef
2 eggs
1 Small onion -- peeled
1 1/2 Teaspoons salt
1/2 Teaspoon pepper
1 Teaspoon dry mustard
1 Can (12 ounce) whole tomatoes

Place the milk and the bread in a large mixing bowl; let stand until the bread has absorbed all the milk. With two forks, break the bread into crumbs. Beat the ground beef into the crumbs until well mixed. Make a hollow in the center of the meat and break the eggs into it. Beat the eggs a little; then grate the onions into the eggs. Add salt, pepper and mustard. Beat the eggs into the beef. Shape into a round cake and place in the slow cooker.

Drain tomatoes, and place them on the meat. Cover and cook on Low for 5 to 7 hours. Before serving, uncover the pot; turn the heat to High, and bubble away some of the sauce. It should be thick, not thin. Dawn(NY) (05:48:19) : Burgundy Meatloaf

2 Lb Ground beef; or mixture of beef/pork/veal
1 small Onion -- chopped
2 Eggs
1 C Soft white bread crumbs
1/2 C Parsley -- chopped
1/2 C Dry red Burgundy
1 T Basil -- fresh
1 1/2 tsp Salt
1/4 tsp Pepper
5 slice Bacon (optional)
1 Bay leaf
8 oz Tomato sauce with mushrooms

Combine ground meat, onion, eggs, bread crumbs, parsley, wine, basil, salt and pepper in a large bowl; mix. Criss-cross 3 bacon slices on a 12-inch square of aluminum foil; shape meatloaf mixture into a 6-inch round on top of bacon. Top with remaining bacon slices, halved, and bay leaf.

Lift foil with loaf into slow cooker; cover. Cook on high 1 hour; turn heat control to low; cook 4 hours longer, or until meatloaf is well-done. Remove loaf from slow cooker by lifting the
foil, tilting fat back into the slow cooker. Discard bacon and bay leaf.
Serve on heated platter and spoon part of the heated tomato sauce over.

Serving suggestion: Serve with buttered noodles and green beans. Beef broth or tomato juice may be substituted for the Burgundy.Verla,.Il (04:19:20) : Different Meatloaf

1 1/2 lb lean ground beef
1 T. Dijon mustard
10 soda crackers
1/2 c, sour cream
1 egg, beaten
1 T. grated onion
Salt and pepper to taste
Mix all together and shape into a loaf.
Bake at 350 for 1 hour

1 c tomato salsa, lightly drain
3/4 c finely crushed tortilla chip
1 egg
1 small onion, chopped
1 garlic clove, minced
1 small fresh green chili, seeded and minced
1/8 tsp crushed hot red pepper
1 tbsp chili powder
1 tsp salt
1/2 tsp ground cumin
1 1/2 lb ground chuck
1/2 c shredded sharp cheddar cheese

1. Preheat oven to 375 F. In a medium bowl, combine salsa, tortilla chips, egg, onion, garlic, chili powder, salt and cumin. Stir with a fork until mixed. Add the ground chuck and mix until blended.
2. Pack mixture into a 8x4x2-1/2 inch loaf pan. Place on baking sheet and bake, uncovered, until a meat thermometer inserted in center of loaf reads 160-165 F, about 1 hour. Sprinkle Cheddar over top of loaf and cake until cheese is melted, about 3 minutes. Let stand 5 minutes before slicing.
