02-24-2000 - 10 Recipes Using Biscuit Mix
chiqui,.new.orleans (06:54:19) : Sausage cheese balls
1 pound hot sausage, casings removed and lightly browned and drained, 1 8 oz. sharp cheddar cheese, shredded, 3 cups Bisquick. Mix well. Shape into balls and bake 350* on cookie sheet about 12 min until browned.
Mary.Oh (06:52:53) : Sausage Appetizers
3 cups biscuit mix
1 pound bulk pork sausage
4 cups shredded Cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon dried rosemary leaves
1/2 teaspoon parsley flakes.
Heat over to 350 degrees. Grease jelly roll pan. 15 1/2 x 10 1/2 x 1 inch.
Stir together all ingredients.
Shape mixture into 1-inch balls.
Place in pan.
Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with barbecue or chili sauce for dipping.
About 6 1/2 dozen appetizers.
High Altitude (3500-6500 ft):
Heat oven to 375 degrees. Decrease baking mix to 2 1/2 cups: stir in 1/2 cup all purpose flour.

1 bunch green onions (scallions), green and white parts, thinly sliced1 large rib celery, finely chopped
1 stick butter or margarine
2-3 cloves garlic, finely minced
3 tabsp. minced parsley
Combine all the above in a non-stick skillet and saute until all veg. are tender. Add:
2 cups of CRAWFISH TAILS, CHOPPED ( OR
Your choice of seafood ex: crabmeat, or shrimp, chopped)
1 teasp. creole seasoning (I Use Tony's)
1/2 dry vermouth or other dry white wine
Simmer another 5 min.
Cool this mixture and then add:
12 oz. grated Swiss cheese
1 bunch green ions and tops, thinly sliced
4 1/2 cups Bisquick mix
1/2 pint whipping cream or half and half
2 1/4 cups milk
6 large eggs
Mix well and allow to stand 5 min. Spray mini muffin tins or regular muffin tins with a vegetable spray. Fill cups 2/3 full. Bake at 350* until lightly browned.
These were created for a wedding that I catered....They are great hot as well as room temp. And they make plenty....freeze extras in freezer zip-loc bags . Reheat in oven for about 15 min.

8 slices bacon, cooked crisp and crumbled
2 1/2 cups cubed, cooked chicken
1 package (10-ounce) frozen mixed vegetables
1 1/2 cups shredded cheddar cheese
1 can cream of mushroom soup (full strength)
3/4 cup plus 2/3 cup milk
1 1/2 cups biscuit mix
1 can French fried onions
Preheat oven to 400*F. In greased 8X12-inch pan, combine bacon, chicken, vegetables and one cup of cheese. Blend soup and 3/4 cup milk; pour over casserole. Bake, covered, 15 minutes. Prepare biscuit mix, 2/3 cup milk and 1/2 can of onions; mix thoroughly. Drop by spoonfuls to form 6 biscuits around the edge of casserole. Bake, uncovered, 15 to 20 minutes, or until biscuits are golden brown. Top with remaining onions and cheese and bake another 2 to 3 minutes, until onions are toasted.

2 1/3 cups Bisquick mix
3/4 cups shredded cheddar cheese
1/4 cup sliced jalepenos, chopped
2/3 cup flat beer
Preheat oven to 450*. Combine mix, 1/2 cup of cheese and the Jalepenos. Stir in beer until blended. Beat vigorously for 30 seconds. Turn out onto a floured surface. Pat into a 1/2" thickness. Cut with a floured biscuit cutter 3". Place on an ungreased baking sheet. Sprinkle with remaining cheese. Bake 8-10 minutes.

5 CUPS pioneer buttermilk biscuit mix
4 tabsp. sugar
1/2 teasp. salt
2 envelopes yeast
2 cups warm milk (110*)
4 eggs
1/2 teasp. cream of tarter
Sift first three ingredients in a large bowl and set aside. In a small bowl, sprinkle yeast over the warm milk; let it proof 10 minutes (should become foamy...if not yeast is dead...start over). Beat together eggs and cream of tarter. Combine with milk and gently pour into the dry ingredients. Stir until well mixed. Set aside in a warm , non-drafty place, covered, and allow to rise for 1 hour. Punch down and divide into two oiled loaf pans. Allow to rise again until doubled in size. Bake in a 350* preheated oven for 30-35 min. Serve Hot!!

12 cups flour
1/4 cup baking powder
2 tablespoons salt
1 pound vegetable shortening
1. Mix together the flour, baking powder and salt in a large bowl.
2. Add vegetable shortening and blend together with a pastry blender, two knives, or your fingertips, until mixture is the same
texture as coarse cornmeal.
3. Store in a dry cool place.
Yield: makes 15 cups

1 1/4 cups low fat milk (2%)
1/2 cup scantly measured light brown sugar
2 tabsp. honey
2 tabsp. Crisco oil
1/2 cup applesauce
1/4 teasp. ground cinnamon
2 1/2 cups Raisin Oat Bran Cereal
Mix all the above ingredients in a large bowl and allow to "soak" for at least 5 minutes
Add:
I large egg, slightly beaten
1 1/2 cups Pioneer Buttermilk Baking Mix
Stir just until mixed....do not overwork!!
Fill 12 muffin cups (paper lined) equally. Bake in a preheated 400* oven for 20 minutes until lightly browned. Approximately 200 calories each. Note: Regular Raisin Bran can be used also.

1 large ripe bananas. mashed
2 heaping tablespoons dark brown sugar
1/4 teasp. ground nutmeg
4 tabsp. cold margarine, cut into slices
Mix all of the above ingred in a med. sized bowl. Add the following:
4 cups Pioneer Buttermilk Baking Mix
1/4 cup milk
3/4 cup coarsely chopped walnuts.
stir just until mixed. Dough should be a little stiff and a little sticky. Pat dough out onto a well floured surface, making an 8" circle about 1/2" thick. Using a floured pizza cutter or sharp knife, cut into 8 equal wedges (Like a pie). Place on a lightly oiled cookie sheet spacing 2" apart. (do not use a cushion-air type cookie sheet for this) Brush tops with a little milk and sprinkle with a cinnamon-sugar mixture. (ex: 3 tabsp. sugar to 1 teasp, cinnamon). Bake at 425* preheated oven 10-12 minutes until lightly browned......great with hot tea or coffee. I serve these with whipped butter, either plain or sweetened with fruit preserves and a little powdered sugar.

(This one pan sweet is a favorite with my office)
1/4 cup butter or margarine
2/3 cup milk
1-1/2 cup Bisquick (r) baking mix
1 cup sugar
1 can (21 ounce) pie filling ... fruit flavors of choice
Heat oven to 400 degrees. Melt margarine in 11x7" baking pan. Add milk, Bisquick mix and sugar; stir until smooth. Drop spoonfuls of pie filling over the batter (don't worry, batter will rise up). Bake 30-35 minutes or until golden brown.
