Chicken Satay with Spicy Peanut Sauce
3 tablespoons soy sauce
1 tablespoon vegetable oil
2 teaspoons brown sugar
1 1/2 pounds chicken breast tenders
1 package wooden skewers, soaked in water
1/2 cup chicken broth
1/2 cup creamy peanut butter
2 teaspoons hot sauce
1/4 teaspoon garlic, minced
2 teaspoons sugar
1 fresh lime, juiced
In medium bowl, combine one tablespoon of the soy sauce, oil and brown sugar. Mix well. Add chicken tenders and mix to coat. Marinate in refrigerator for 1-2 hours.
In another bowl, make dipping sauce with the remaining soy sauce, broth, peanut butter, hot sauce, garlic, sugar and lime juice. Set aside to allow flavors to blend.
Heat broiler (can also be cooked on the
grill). Thread 2 tenders per skewer. Place chicken skewers on a broiling pan and broil until cooked through and browned, about 4-5 minutes per side. Serve with peanut sauce.
NOTE: This is really good using pork
tenderloin, instead of chicken!

3 cups Salted peanuts without skins
3 tablespoons Butter
2 cups Peanut butter chips
14 ounces Sweetened condensed milk
2 cups Miniature marshmallows
Place half of the peanuts in an ungreased 11x7x2-inch baking pan; set
aside. In a saucepan, melt butter and peanut butter chips over low heat.
Add milk and marshmallows; cook and stir until melted. Pour over peanuts.
Sprinkle the remaining peanuts on top. Cover and refrigerate. Cut into bars.

1 pk Betty Crocker Fudge Brownie Mix
15 Up to 18 Reese's Mini Peanut butter Cups
Make brownie mix per directions. Fill paper-lined muffin cups 2/3 full. Unwrap peanut butter cups & press into the center of each 'muffin' until the batter meets the top edge of the candy. Bake at 350 degrees for 20 to 25 minutes. Makes 15 to 18.

Yield: 24 bars
2 c Peanut butter sandwich cookie Crumbs(about 20 cookies)
3 tb Butter
1 1/4 c Peanuts, chopped
1 c Semi-sweet choc. morsels (about 6 oz.)
1 c Coconut, flaked
1 1/4 c Sweetened condensed milk
Combine crumbs and butter in small bowl. Press onto bottom of greased 13 x 9 inch baking pan.
Layer peanuts, morsels, and coconut over crumb mixture.
Drizzle sweetened condensed milk evenly over top. Bake in preheated 350 degrees oven for 20 to 25 min. or until coconut is golden brown. cool completely on wire rack.

1/2 c Margarine
1/2 c Peanut butter
1/2 ts Vanilla

Chocolate chips
Stir sugars together. Blend in margarine, peanut butter, vanilla and
egg. Stir in flour to make a soft dough. Press into pizza pan and bake
for 10 minutes at 375~. Sprinkle with marshmallows and chocolate chips
and bake for an additional 5 to 8 minutes or until nicely browned. Makes 6 servings

1 cup butter (melted)
1 cup coconut
1 cup graham cracker crumbs
1/2 cup chunky peanut butter

pkg. Pillsbury yellow cake mix
1 cup peanut butter
1/2 cup butter or margarine
2 eggs
In large mixing bowl combine cake mix, peanut butter, butter and eggs by hand, stir until dough holds
together. Press 2/3 of dough into bottom of ungreased 13 x 9 pan. Reserve remaining dough for
topping.
Prepare filling, spread over dough in pan. Sprinkle reserved dough over filling in pan. Bake 350 for
20 to 25 minutes until light brown. Cool, cut into bars.
FILLING
1 cup (6oz) semisweet chocolate pieces
1 1/3 cup (14oz can) sweetened condensed milk
2 T. butter or margarine
1 pkg. Pillsbury coconut pecan or coconut almond frosting
In heavy sauce pan, combine chocolate pieces, sweetened condensed milk and butter. Melt over
low heat, stirring constantly until smooth. Remove from heat, stir in frosting mix.

1 3/4 cup self rising flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup solid shortening
1/2 cup peanut butter
2 T. milk
1 tsp. vanilla
1 egg
48 milk chocolate kisses
Mix together sugar and shortening. Add peanut butter, milk, vanilla and egg.
Lightly spoon flour into measuring cup, level off. Combine in large mixer bowl. Mix at low speed until a dough forms.
Shape dough into balls, using a rounded teaspoon of dough. Roll balls in additional sugar. Place on an ungreased cookie sheet. Bake at 375 for 10 to 12 minutes until golden brown.
Top each hot cookie immediately with kisses, pressing down so cookie cracks around edges.

BOIL THE ABOVE 2 MINUTES THEN ADD
3 t. Vanilla
1/2 Cup peanut butter
3 Cups oats
SPOON OUT ON WAX PAPER

1 box brownie mix
1/2 cup of butter (no substitutes)
10 OZ. package peanut butter chips
1 14 oz. can sweetened condensed milk
1/4 cup chocolate chips
chopped peanuts
Mix and bake brownie mix according to directions. Let cool.
For topping, melt butter and peanut butter chips over low heat.
Stir in sweetened condensed milk. Spread over cooled brownie.
For decoration, melt chocolate chips over low heat. Spoon melted chips into a plastic sandwich bag. Clip corner of bag and drizzle over top of brownie. Sprinkle with chopped peanuts.

2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup white sugar
3/4 cup creamy peanut butter
1 cup milk
1 eggPreheat oven to 350 degree F (175 degrees C). Coat a 9 x 5 inch loaf pan with vegetable cooking
spray.
Combine flour, baking powder, salt, and sugar in a bowl.
Add the peanut butter, and mix in with a pastry blender.
Add milk to beaten egg, and pour this mixture into the
flour mixture. Stir until thoroughly combined; do not
beat. Spread batter into prepared pan.
Bake for 50 to 55 minutes. Cool before slicing.
Makes 1 loaf

1 1/4 c. graham crackers (15 squares)
1/4 c. sugar
1/2 t. cinnamon
1/2 t. nutmeg
1/2 c. peanut butter
1/3 c. white karo syrup
Crush crackers, add sugar, cinnamon and nutmeg, Mix well. Stir in peanut butter and karo, blend well. Roll into balls. Sprinkle with confectioners sugar if desired.

3 tablespoons butter or margarine
1 package (10 ounces) marshmallows
1/2 cup Reduced Fat
Creamy Peanut Butter Spread
6 cups crisp rice cereal
Butter 13 x 9 x 2-inch pan. Melt butter in large
saucepan on low heat. Add marshmallows. Stir until
completely melted. Remove from heat. Add Jif. Stir
until well blended. Add cereal. Stir until well coated.
Press into buttered pan. Cool completely. Cut into 24
squares.
Yield: 2 dozen

1 package (18-1/4oz) devil's food cake mix
1 cup butter or margarine -- melted
1 jar (7oz) marshmallow cream
3/4 cup peanut butter
In a bowl, combine cake mix and butter; mix well. Set
aside 1 cup for topping. Spread remaining cake
mixture into a greased 13x9" baking pan. Combine the
marshmallow cream and peanut butter; carefully
spread over cake mixture. Crumble reserved cake
mixture over the top. Bake at 350 degrees for 18-20
min. or until toothpick inserted in the middle comes out
with moist crumbles. (Do not overbake) Cool
completely. Cut into squares. Yield: about 2-1/2 dozen

1 pkg. instant vanilla pudding mix (4 serving size)
1 15-1/4 ounce can pineapple chunks, drained
2 cups finely crushed graham crackers
1/2 cup packed brown sugar
1/2 cup Jif Peanut Butter
Whipped cream (optional)
Maraschino cherries (optional)
Prepare pudding mix according to package directions,
except use 2 1/2 cups milk. When thick, fold in
pineapple. In mixing bowl, blend graham cracker
crumbs, brown sugar, and Jif.
Turn half the pudding mixture into a buttered
8x8x2-inch pan. Top with half the peanut butter
mixture. Repeat layers. Cover and chill.
Garnish with whipped cream and maraschino
cherries, if desired.

2 cups creamy peanut butter
1 3/4 cups sugar
1 cup whipping cream
1 9" baked pie crust
Topping
1/3 cup sugar
2/3 cup whipping cream
3 oz semisweet chocolate
1 stick butter
1 tsp vanilla
toasted peanuts
Mix cream cheese, peanut butter and sugar in a bowl
until blended. Whip cream (chill cream, bowl and
beaters well), then fold into peanut butter mixture.
Spoon filling into crust.
For topping: Combine sugar and cream in a saucepan;
bring to a boil. Reduce heat and simmer 7 min.
Remove from heat. Add chocolate and butter; stir until
melted. Stir in vanilla. Cool until slightly thickened.
Pour evenly over filling. Chill 4 to 5 hrs before serving.
Garnish with toasted peanuts.

8 cooked waffles of choice flavor
1/2 c. peanut butter
1/4 c. honey
1/2 c. jam of choice flavor
2 bananas, sliced
Mix together peanut butter & honey. Spread 4 waffles with peanut butter mixture. Spread other 4 with jam. Layer sliced bananas on top of jam. Top with peanut butter waffles. These sandwiches can be frozen and heated in microwave. (you can use apples or raisins for variety)
