Recipe: Red Beet Eggs and Red Beet Pickles

RED BEET EGGS

Hard boil eggs for 10 minutes -- no longer or the egg whites will become rubbery. Place in enough red beet juice to cover eggs, and soak for at least 2 days.

RED BEET PICKLES

3 cups sugar
3 tsp. salt
2 cups vinegar, heated
1/2 cup grated horseradish (optional)
2 quarts cooked beets, diced or sliced beets
3 small onions, chopped
3 green peppers, chopped

Place vinegar in a saucepan and bring to a simmer. Dissolve sugar and salt in the hot vinegar. Add horseradish (if used) and bring to a boil.

Lower heat, add beets, onion, and peppers and simmer 20 minutes.

Store in the refrigerator.

My Grandma made these, I have not.
