Reuben Chicken

Reuben Chicken is easy and tasty and can be made ahead and reheated. Also easily doubled/tripled. This goes great with bread dumplings or boiled potatoes, Dark Pumpernickel and a nice green salad.
8 Chicken breast halves (Or 1 chicken cut in 8 pieces)
Bone in or out, skin on or skinless depending on your needs.
1 (16 oz) can Sauerkraut (Bavarian-style kraut is best if you can get it) Drain
the kraut but DON'T rinse it.
1 (16 oz) bottle of 1000 island dressing (Or you can make homemade)
4 oz Swiss Cheese (The real stuff not the low/no fat)
Preheat oven to 350F. Place the chicken pieces in a baking dish, sprinkle with a bit of black pepper
if you wish, no salt is needed. Top (in order) with Kraut, Salad dressing and swiss cheese.
Cover with foil and bake for 45-50 minutes uncover and let the cheese brown a bit under the broiler if possible.
If you use chicken parts with bones in, you will have to cook it at least 60-75 minutes.
