Recipe: Rice Stuffing for Vegetables ( Dolma Ici)

RICE STUFFING FOR VEGETABLES
(DOLMA ICI)


1 1/4 cups olive oil
1 large onion, chopped
1 Tbsp pine nuts
1 cup long grain rice, washed and drained
1 Tbsp small raisins, soaked and washed
salt and ground black pepper
1 tsp sugar
14 fl oz water
juice of 1 lemon
a handful of fresh parsley chopped
2 tsp chopped fresh dill weed
2 tsp chopped fresh mint
1 tsp ground cinnamon

Heat the oil in a large saucepan, stir in the onions and pine nuts, and fry for a few minutes, until the pine nuts are light pink in color.

Add the rice and stir together until the rice becomes transparent. Add the raisins, salt and pepper, sugar, and water to cover. Cover and cook until the water is absorbed.

Allow to cool slightly then stir in the lemon juice, parsley, dill weed, mint, and cinnamon.
