MINUTE RICE WITH BACON, EGGS AND CHEESE SAUCE
FOR THE SAUCE:
1 (10 oz) can condensed cream of mushroom soup
1 (5 oz) small can evaporated milk (2/3 cup)
1 to 2 cups cheddar cheese or American cheese
FOR THE RICE:
4 servings cooked Minute Rice
4 hard-boiled eggs, chopped
6 to 8 slices crisp fried bacon,crumbled
Heat sauce ingredients over medium heat in a small saucepan. Stir until cheese is melted and sauce comes to a simmer. Remove from heat; pour into a serving bowl.
Stir the cooked rice, hard boiled eggs and bacon together gently in a large serving bowl.
Serve rice mixture in individual bowls. Serve heated sauce in a serving bowl and allow guests to apply sauce to their individual portions of rice, bacon and eggs.
Serve with biscuits or cornbread.
