I previously posted a recipe for a great roast chicken. This is delicious and cheap eating. You can usually find whole fying chickens on sale (3.5 to 4 lb.) and one chicken can provide you with quite a few meals.
For instance:
Take the chicken off the bone after the first meal, slice it or chunk it up for future use in individual portions (can be frozen)
Break up the carcass and put it in a pot. Barely cover the bones with water, add some celery with leaves, a quartered onion, a few peppercorns and simmer for an hour or so, then strain--chicken broth. Don't salt it until you've finished it and tasted it--the salt can concentrate and become very strong. You can add noodles and some of that leftover chicken, maybe leftover veggies for a hearty soup. Add salad and a hearty bread or rolls for supper.
The leftover chicken meat can be used for:
Chicken and leftover gravy over biscuits, rice, noodles, stovetop stuffing or mashed potatoes
Sandwiches for brown bag lunches for work
Bacon, lettuce, tomato, chicken sandwich on crusty bread with soup can make a great dinner
Enchiladas with canned or bottled sauce (they usually give you a simple recipe on the can--use your chicken for the filling)
Make homemade chili with beans and add some finely chopped cooked chicken toward the end of cooking instead of beef.
Add chicken to casserole recipes and freeze them in individual portions for later.
