I understand your problem with the salty ham as I don't care for it myself. Perhaps you could consider this as an alternative for your guests. This recipe is quite delicious and I have been asked for it often. I should have mentioned that doubling the recipe is very simple.
ROAST PORK AND SPICED APPLES
Serves 8-10
4 to 5 lb Center cut pork loin roast
1/2 tsp each, cinnamon, nutmeg, and pepper
1 tsp ground ginger
Pre-heat oven to 325 degrees F.
Rub the seasonings into the roast. Place on a rack set in the center of a roasting pan, fat side up. Pour enough water in the bottom to prevent burning.
Cook until the roast tests done (170 degrees F on a thermometer).
HONEY SAUCE AND APPLES
1/4 cup honey
1/2 cup water
1 tblsp fresh lemon juice
1/4 tsp each ginger, nutmeg, and cinnamon
2 medium red cooking apples, peeled and sliced
In a med. saucepan combine all, except the apples.
Stir well and bring to a boil.
Add the apples slices, cover and simmer about 8 minutes until tender.
Spoon over pork slices when served.
