Recipe: Roasted Salmon Filets (using pesto and fresh bread crumbs, serves 2)

2 (5 to 6-ounces each) salmon filets, skin removed
Squeeze of lemon juice
Salt and pepper to taste
2 tablespoons fresh pesto sauce
2 tablespoons fresh breadcrumbs, divided use
1 tablespoon finely grated pecorino cheese, divided use
Preheat oven to 450 degrees F.
Check fish to make sure the bones have been removed. Place filets on a baking sheet with sides (also called a jelly roll pan) that is covered with foil and lightly oiled. Squeeze lemon juice on each filet and season with salt and pepper.
Mix the pesto with 1/3 of the breadcrumbs. Spread mixture over fish.
Mix half the cheese with the remaining breadcrumbs, then sprinkle over the fish. Top fish with the remaining cheese.
Bake for about 10 minutes, or until fish is just cooked and moist. The top of the filets should be golden brown.
