Recipe: Chocolate Chip Banana Bread (using oil and buttermilk, makes 2 loaves)

CHOCOLATE CHIP BANANA BREAD

1/3 cup canola oil
1 cup sugar
3 eggs, beaten
2/3 cup buttermilk
4 to 5 bananas, mashed
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
1/2 cup chopped walnuts (optional)

Preheat oven to 325 degrees F. Coat two (9x5-inch) loaf pans with cooking spray.

In a large bowl, combine oil, sugar, eggs, buttermilk, and bananas; beat until thoroughly mixed. Beat in flour, baking soda, and salt until just blended.

Stir in chocolate chips and nuts, if desired. Pour batter into prepared loaf pans.

Bake 55 to 60 minutes, or until a toothpick inserted in center comes out clean. Let cool 5 minutes then remove from pans.

Makes 2 (9x5-inch) loaves
