Hi Janice, This is great, because it's all in one pot (well frying pan) , it's easy , and doesn't take long to cook.
ROTEL SPICY SKILLET CHICKEN
4 boneless, skinless chicken breast halves
2 tablespoons olive oil
1 medium onion
3 cloves garlic, minced
2 cups sliced fresh mushrooms
1 (10 ounce) can Rotel Diced Tomatoes and Green Chilies
1/4 cup shredded part skim mozzarella cheese
Hot cooked rice (for serving)
In skillet, cook chicken in oil until brown.
Add onion and garlic, saute until tender, about 5 minutes.
Add mushrooms and Rotel; reduce heat. Cover; simmer 25 minutes, stirring occasionally until meat is done.
Sprinkle with cheese. Replace cover and heat until cheese melts.
Serve with rice.
Note: Because I serve this over rice, I like more liquid, so I use 2 cans of Rotel.......one regular, and a new one they came out with called MILDER. Also, I have used Monterry Jack cheese if I didn't have the mozzarella, both are delicious.
