Recipe: Sweet and Sour Turkey with Rice (using cooked turkey)

SWEET AND SOUR TURKEY WITH RICE

1/2 cup packed brown sugar
1/2 cup chicken broth
1/4 cup ReaLemon Lemon Juice from Concentrate
2 tbsp soy sauce
4 tsp cornstarch
3 cups cubed cooked turkey
1 (20 ounce) can pineapple chunks packed in juice, drained
6 medium green onions, sliced, divided use
1/2 cup chopped red bell peppers
3 cups hot cooked rice (for serving)
1/4 cup chopped peanuts (for garnish)

In medium-sized saucepan combine brown sugar, chicken broth, ReaLemon, soy sauce and cornstarch; cook and stir until thickened and bubbly.

Stir in turkey, pineapple, half of the green onions and bell pepper. Heat through.

Serve with rice. Sprinkle with remaining green onions. Sprinkle with peanuts. Store leftovers covered in refrigerator; reheat to serve.
